Kidney-Friendly Deviled Eggs Recipe

These kidney-friendly deviled eggs are an excellent way to use up dyed eggs! Take them to a potluck and they'll disappear.

Deviled Egg Recipe

Makes: 4 servings (serving is 1 egg or 2 halves)

Per serving: Calories 130, Protein 7g, Sodium 90 mg, Potassium 80 mg, Phosphorus 110 mg


Ingredients

4 hard-boiled eggs, peeled

1 TBSP onion, finely minced

1/2 tsp white vinegar

1/2 tsp dry mustard

2 TBSP mayonnaise

Pepper, to taste

Dash of paprika


Directions

1. Cut eggs in half lengthwise and remove yolk. Place yolks in a medium bowl.

2. Mash yolks with a fork and mix in onion, vinegar, dry mustard, mayonnaise, and pepper.

3. Refill egg halves, heaping slightly.

4. Sprinkle with paprika and serve.
