Kidneys in the Kitchen: Simple Apple Crisp


This simple apple crisp is easy-to-make and low in sugar.

Makes 8 (1/2 cup) servings


INGREDIENTS

4 c chopped apples (peeled, if desired)

1 TBSP cornstarch

3/4 tsp ground cinnamon, divided

1/2 c maple syrup

2 tsp lemon juice

1/2 tsp vanilla extract

1/4 c all-purpose flour

3/4 c rolled oats

2 TBSP brown sugar

2 TBSP butter, unsalted and melted


INSTRUCTIONS

Mix together corn starch, 1/2 tsp cinnamon, maple syrup, vanilla extract and lemon juice. Add apples to syrup mixture and spread into lightly oiled 10-inch pie pan. Combine all-purpose flour, rolled oats, brown sugar, 1/4 tsp ground cinnamon, and butter with a fork or pastry cutter until it resembles small crumbs. Spread the crumb topping evenly over the apple mixture. Bake in 375 degree oven for 30-35 minutes or until golden brown and top is set. Remove from oven and let cool for at least 10 minutes before serving.
